which are the best to use when dong a disc brake swap? the cast ones or the stamped steel ones the come from the donor truck?

The bumpside trucks' radius arms aren't cast, they're forged steel, and are stronger than the stamped-steel version from the dentside era. But either would work just fine for most people.
I'd keep my eyes open for the extended-length dentside pieces used with a factory sway bar, so you could upgrade to that down the road.
